		<description>It&#039;s usually crispy right out of the pan but if you leave it out too long it will become soggy.  it also depends on the thickness too.  If the crepe is very thin, then chances are it&#039;ll be crispier.  Typically, it&#039;s crispier around the edges and as it becomes thicker near the center, it gets less crispy.</description>
