Congee - Chao


Congee, plain - Chao
Plain Vietnamese rice congee is no different from its Chinese counterpart, and is extremely easy to prepare. Rice is boiled in a pot with double the amount of water one would use to prepare regular steamed rice. Plain chao sprinkled with salt and pepper is often used as a cheap, home remedy for the common cold.

Chicken Congee - Chao Ga
As the name suggests, chao ga is a congee that is prepared with a sweet chicken broth, strips of boiled chicken and sprinkled with freshly chopped scallion. Extremely comforting -chao ga is Vietnam's answer to North America's chicken noodle soup.

Innards Congee - Chao Long
Despite its unappealing name in English, chao long is a savoury congee dish that consists of chopped pork liver, chewy pork intestine and cubes of congealed pig's blood, flavoured with fish sauce and black pepper. Given this, perhaps it is an acquired taste among non-natives. In Vietnam, chao long can often be found in street stalls, and is a favourite among midnight snackers.
