Vietnamese restaurants don’t often carry a big dessert menu. The reason for this is the Vietnamese do not traditionally eat dessert after their meals. Most sweet treats are often reserved for special occasions such as holidays and parties. Many restaurants, however, do offer a delicious dessert called Che Ba Mau. Tri-Coloured Bean Drink - Che Ba Mau
There is no direct translation for che, but it normally refers to a sweet dessert that is often in a pudding-like form. There are countless types of che, but the most widely available and popular of them all is che ba mau (ba mau = three colours). In a tall glass, sweet red bean and sweet mung bean are layered on top of each other, along with crushed ice, coconut milk and green tapioca jelly, eaten with both a straw and spoon. A definite treat on a hot summer's day.
