Pad Thai
Pad Thai, as the name indicates, is a Thai dish and does not originate in Vietnam, but due to the proximity of the two countries, this dish has found its way onto many menus in Vietnamese restaurants in North America. Pad Thai in its authentic form is usually a very mild dish, contrary to the notion that everything Thai is tongue-splittingly spicy. Rice noodles are stir fried with eggs, fish sauce, tamarind juice (to give it the slightly sour taste), and beansprouts, along with your choice of tofu/shrimp/chicken/beef. Finally, pad thai is then garnished with a fresh lime, sprigs of cilantro and crushed peanuts.

Curry Pad Thai
Whereas the unique flavour of pad thai noodles is its sweet and sour taste, curry pad thai takes on the same form, only, instead of sweet and sour, it bursts of a savoury and spicy curry flavour. Most curry pad thais use red or yellow curry; even though green curry would suffice taste-wise. Perhaps green noodles are a least appetizing choice among the three colours.
