Crispy Noodles with Stir Fried Vegetables - Mi Xao Don Rau Cai
If you are a strict vegetarian, perhaps you should note that this dish uses deep fried egg noodles as its main ingredient. After being deep fried, the noodles are extremely dry and crispy. Bok choy, mushrooms, bell pepper, tofu and any other vegetable of your choice are stir fried with a sweet and savoury black bean and imitation oyster sauce-based sauce, then poured onto the crispy noodles, which has the effect of softening them a bit and making them easier to eat. Again, if you are a strict vegetarian, you may want to check to see if the imitation oyster sauce they are using is indeed a vegetarian version. As for the noodles, comprimises will probably need to be made by the diner in question!

Thin 'Glass' Noodles with Stir Fried Vegetables - Hu Tieu Xao Rau Cai
Bok choy, mushrooms, diced tomatoes, and tofu are stir fried with garlic, along with soy sauce and imitation oyster sauce. This savoury mixture, sauce and all, is then poured onto thin 'glass' noodles. Chili sauce on the side is highly recommended to enhance the taste of this dish!
