Vermicelli Soups - Bun Nuoc


Vermicelli, or bun, refers to the thin and round white rice noodle. It differs from pho noodle in shape, and especially, texture.
*Some restaurants serve thicker vermicelli in certain dishes.



Crab Meat Noodle Soup - Bun Rieu
Bun Rieu is an extremely rich noodle soup originating from northern Vietnam. Made with a tomato-based broth flavoured with fresh crab paste and shrimp paste, bun rieu is a fine meld of sweet, savoury and sour. Vermicelli noodles, crab cake, fried tofu, and vegetarian sausage are added to the soup base, then garnished with fresh cilantro, bean sprouts and fresh water spinach.

Spicy Hue Noodles - Bun Bo Hue
Best if prepared a day in advance, bun bo Hue is the most famous dish to come out of the centrally located, imperial city of Hue. Thicker, round rice noodles in a spicy beef broth flavoured principally with lemongrass and chili, bun bo Hue is extremely rich in flavour and aroma. Large pieces of pig knuckle and (fatty) slices of beef add body to the soup, while thinly sliced red onions, chopped scallion and a squirt of lime give bun bo Hue an element of freshness.

Bamboo Duck Vermicelli Soup - Bun Mang Vit
This light tasting dish has many subtle flavours that are provided by duck meat, bamboo shoots, garlic, ginger, and several herbs and spices. The combination of bamboo shoot, duck meat, and vermicelli go very well together, for they create a light dish which anyone can enjoy without feeling stuffed. A special dipping sauce is usually served with this dish. The sauce is used to dip the duck meat in to give it a bolder taste.

Hanoi Chicken Soup - Bun Thang
Bun thang originated and is most commonly eaten in Northern Vietnam. It has a subtle, but very sweet flavour. The sweetness comes from the broth, which is prepared with chicken, pork, and dried shrimps. The dish is decorated with cha lua, chopped fried eggs, chicken, shrimps, shallots, and sometimes, pork. A side dish of been sprouts, mints, lettuce, and lime completes this healthy northern dish.

Pickle Fish Vermicelli Soup - Bun Mam
Bun mam is one of the most colourful Vietnamese dishes. It has an extensive list of ingredients that includes: chicken or pork broth, shrimps, fish, water spinach, lemongrass, garlic, shallot, pork, banana blossom, eggplant, Chinese chives, prawn paste, and various herbs. All of this is served with vermicelli, in a bowl of hot soup. The dish is then topped off with chili sauce and a squeeze of lime. Every bite is guaranteed to reveal a new and exciting flavour!
