What is Pho?
Vietnamese Noodle Soup - Pho
Pho is the most well known and most widely-available Vietnamese dish. The broth is typically prepared a minimum of three hours in advance using beef bone, and flavoured with fish sauce, anise, charred ginger, and onion. Vietnamese restaurants will generally offer a wide range of meat ingredients that one can choose to add to a steaming bowl of pho such as: rare thinly sliced beef, tripe, tendon, ground beef meatballs, etc. Pho containing most of the aforementioned ingredients is usually called pho dac biet (“special pho”), and is each restaurant’s most popular variety of pho. Fresh lime, basil leafs and bean sprouts are served on the side and are added to the soup in accordance to one's preference. Hoisin sauce and chili sauce are also provided to give the soup a sweeter and spicier flavour, respectively. However, the best bowl of pho generally should not require these sauces, as the flavourfulness of its own broth should suffice.
